Bhojan-o-pedia "Paneer Kofta Curry"
Before I start off with the recipe of "Home-made Paneer Kofta Curry", I would like to extend my warm wishes for "Maha Shiv Ratri". "Shiv Ratri" is a very ancient festival which is being celebrated throughout the length and breadth of India. History unfolds that "Shiv Ratri" is the day when Lord Shiva had drunk the poison which was discovered from "Samundra Manthan", in order to save the world from negativity. Since, my childhood I have seen all the ladies of my family to celebrate this festival by fasting and devoting milk bath to the "shiv linga". The day following the Shiv Ratri also, the festivity continued while the ladies of the house broke their fast. That day used to be marked with vegetarian delights served at lunch. Among them the "chennar kofta" used to be one of the "not-to-be-missed-dishes".
So, to carry forward the legacy, here I present the easy-breazy recipe of "Chennar Kofta" by replacing the chenna with paneer.
First starting with the Kofta.
Take 500gm of crushed paneer, add half cup of maida, add one table spoon of sugar and one table spoon of salt. Top them with half a tea spoon of chili powder and zeera powder. Now, blend and mix them well. Time to show some some muscle power!
Now, as the dough is ready, make small balls by tucking in a raisin.
Now, add white oil in the kadai and deep fry the balls and your kofta is ready to rock!!
Moving on to the Gravy.
It is a simple tomato gravy with ingredients as follows-
Add white oil to the kadai and 2 table spoons of ghee, drop in the garam masala. Then add the tomatoes and green chili. After the tomatoes get soften a little, add "swad anusar" salt, sugar, half tea spoon turmeric powder, chili power and zeera powder. Then add one tea spoon of garam masala powder and mix the masala well.As the masala gets mixed well and the gravy thickens up, add half a cup of milk or curd to give a creamy texture to the gravy.
Finally, add the kofta balls to the gravy and immediately swich off the heat.
Plate it with vegetable doodh pulav or paratha and enjoy a happy lunch with your family!!!
